Barbecue Tips - Fish


RAINBOW TROUT BUNDLES
(Serves 6)

1.5 kg rainbow trout

On the surface:

1,5 tsp lemon pepper
A large pinch salt
375 g shredded mixed root vegetables, frozen
1 big onion, sliced
150 g unripened soft cheese with black pepper and dill

Remove the skin of the fish. Cut the fish in 6 pieces and place the pieces on 6 sizeable sheets of kitchen foil. Add salt and lemon pepper on the fish. Place the root vegetables, onion slices and unripened soft cheese on the fish. Wrap the tin foil into little bundles. Cook the fish bundles on the barbecue for 10 - 20 minutes, depending on the heat.


SUMMER FISH

500 g fillet of fish, e.g. rainbow trout
Sea salt
Oil

Sprinkle salt on the fillet of fish and let it soak in for a couple of hours. Wipe the salt off before placing the fillet on the barbecue. Add oil on the fish using for example a little brush. Place the fish on the barbecue with the skinside up; turn the fish halfway through. Remember that if the barbecue is very hot, the fish will burn easily. It pays off to wait until the temperature is mild enough for the fish.
Serve the fish with new potatoes and a nice fresh salad.
